It was great to meet you as well during the spleen sandwich preparation. In one of my Sicilian cookbooks, they have a recipe for "breadroll with spleen." In this recipe, the author said that the lungs, trachea (if available), and spleen are the ingredients for the filling. That was more info than I wanted to know! On the anchovies, your generous use of them sounds great. I'm excited to see what nice meal I can make with them! Con calore, Linda
